イネ科穀物（米、麦、粟、稗、黍、トウモロコシなど）にはウルチとモチがあります。ウルチは枝分かれの少ないでんぷん（アミロース）が主成分～半分くらいで、モチはアミロースがほとんどなく枝分かれの多いアミロペクチンが主成分の場合です。関連遺伝子は特定されていて、waxy（ワクシー、waxのようにつやがある、の意）遺伝子と呼ばれています。waxyが働いているとウルチになり、変異があり正常に働いていないとモチになります。
植物は基本的な遺伝子が複数集積した「倍数体」をとるものが多くあり、コメは2倍体/4倍体、小麦は2,4,6倍体、トウモロコシは通常2倍体でまれに４倍体だそうです。倍数体の場合は変異の割合によってアミロースとアミロペクチンの比が変わります。モチの場合はwaxy遺伝子をすべて不活性にしないとできないそうです。

米のwaxy遺伝子は通常より低温または高温で働きが活発になります。うるち米の味にはアミロース/アミロペクチン比が重要なため、おいしいコメ作りには生育時の温度が重要だということです。
waxy遺伝子を改変したトウモロコシなどがつくられ、遺伝子組み換え品として生産が始まっているようです。作物の遺伝子組み換え品は、安全性を確認してから開放環境での栽培や輸入が許可されるようになっています。
