今週の世界の研究所は、チーズの研究所を探していたら IrelandのTeagasc (Agriculture and Food Development Authority)という組織が引っ掛かりました。農業と食品関係の役所と研究所を兼ねていて、大学院生も指導しているようです。

など、面白そうなことをやっています。チーズの物性と構造の関係というのは楽しそうです。日本だと会社が「裂けるチーズ」「空気を大量に含んだ低カロリーチーズ（美味ですが、空気が売れるので会社にとっても「おいしい」と思います）など面白いものを作っていますね。

なぜチーズに関心があるかというと、先月ベルギー人と学会で雑談したときに、日本のホテルは朝食にチーズがないとこぼしていたのですが、私にはそのチーズの種類が分からなかったためです。調べていたらアイルランド語は英語とかなり違うこと、人口は520万人で北海道とおなじくらい、一人当たりGDPは世界10位の$99152（2021年)で日本の倍以上であること、などいろいろ興味深いです。なぜそんなに裕福なのか、産業構造はどうなっているのでしょうか。
